    Scrub taro and place in pot. Cover with water.

    Boil until fork tender, about 2 hours.

    Peel while warm. Cut into chunks.

    Pound with poi pounder or process, adding water to desired consistency.

    Tip: One-finger poi is thick, three-finger is thin.
