Wash taro leaves thoroughly, remove tough stems.
Tip: Leaves must be cooked long to remove calcium oxalate.

Season pork with Hawaiian salt.

Layer 5-6 taro leaves, place pork and butterfish in center.

Wrap taro leaves around filling, then wrap in ti leaves.
Tip: Ti leaves add flavor and hold everything together.

Steam for 4 hours until leaves are very tender.
Tip: Traditional imu cooking takes 6-8 hours.

Serve with rice and poi.
