    Quarter cabbage and salt generously between leaves. Let sit 2 hours.

    Rinse cabbage thoroughly and squeeze out excess water.

    Mix paste ingredients together.

    Tip: Wear gloves!

    Massage paste into cabbage leaves, add green onions.

    Pack into jars, leaving 1 inch headspace.

    Ferment at room temp 1-2 days, then refrigerate.
