The best fried rice uses yesterday rice. This is how we use leftovers in Hawaii.

Heat wok over high heat until smoking.

Scramble eggs, set aside.

Add oil, stir-fry char siu briefly.

Add rice, breaking up clumps, fry until heated through.

Add soy sauce, peas, eggs, green onions. Toss to combine.

Finish with sesame oil.
